Hello everyone...a break of 2 weeks has been lovely but its nice to be back and baking:) These little cakes were based on Ferrero Rocher chocolates....my Mum used to love these at Christmas, and considered them very 'Posh'. She would put them on the table after our Christmas dinner and nibble on them while sipping her glass of Tia Maria. So in her memory I put this recipe together. They are very rich and sticky, just like the chocolates!
Ingredients
112 cups flour
12 cup chopped hazelnuts
12 chopped fudge pieces
12 cup milk chocolate chips
1 tbsp finely grated orange zest
12 cup brown sugar
2 tsps baking powder
12 tsp bicarbonate of soda

12 cup olive oil
2 eggs
1 cup orange juice
13 cup milk
2 tsps baking powder
12 tsp bicarbonate of soda

Preheat oven to 180?C. | |
Line muffin tray with muffin cases. Makes about 12 | |
Sift flour, bicarb soda and baking powder together in large mixing bowl, and stir in ground hazelnuts, grated rind and choc bits. | |
In another bowl, whisk together eggs, oil, juice and milk. | |
Pour liquid ingredients into dry ingredients and mix very lightly till just combined. | |
Bake for approx 20 minutes or until lightly golden. | |
Cool on wire rack. | |
Decorate with chocolate frosting of your choice and decorate....have fun xxx |
